Meal Prep 3 Meals in 15 Minutes with Crockpot Chicken - One Recipe, Multiple Meals
One of the biggest misconceptions I hear from clients is that meal prep means cooking an entirely different meal for every day of the week. That sounds exhausting. I'm also not a fan of spending more than 15-30 minutes in the kitchen. That's where this crockpot chicken & meal prep 3 meals in 15 minutes comes from!
Instead, I like to start with one versatile protein and build several different meals from it. It saves time, cuts down on decision fatigue, and keeps dinner feeling fresh without starting from scratch every night.
This versatile crockpot chicken is one of my favorite examples that can be made into:
Quesadillas
Alfredo
Chicken salad sandwich
Wraps
Nachos
Salads & more!

Nachos

Chicken Salad

Start with Simple Crockpot Chicken
Ingredients
3-4 pounds boneless, skinless chicken thighs
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon dried oregano
½ teaspoon black pepper
Directions
Place the chicken thighs in your slow cooker.
Sprinkle with the seasonings.
Cook on Low for 4–5 hours or High for 2–3 hours, until the chicken easily shreds with two forks.
Shred the chicken directly in the crockpot, mixing it with the juices before portioning into containers.
A Quick Tip
If you're using boneless, skinless chicken thighs, you don't need to add any liquid.
The thighs naturally release enough moisture while they cook, creating tender, flavorful shredded chicken without watering it down.
Turn One Batch into Three Meals
Now comes the fun part. Divide the chicken into containers and give each one a different flavor!

Chicken Salad
Mix shredded chicken with:
Plain Greek yogurt or mayonnaise
A squeeze of fresh lemon juice
Halved grapes
Chopped celery (optional)
Salt and pepper to taste
Serve on croissants, whole grain bread, crackers, or over greens for an easy lunch.


Taco or Nacho Filling
Stir together:
Shredded chicken
Your favorite salsa
1 can black beans, drained and rinsed
Use for tacos, burrito bowls, nachos, quesadillas, or taco salads throughout the week.


Mediterranean Chicken Wraps
Combine shredded chicken with:
Chopped cucumber
Tomatoes
Kalamata olives
Crumbled feta
Greek dressing
Wrap everything in a tortilla, pita or serve over greens for a quick, flavorful meal.


Make Meal Prep Easier, Not Harder
You don't need seven different dinners to have variety.
Sometimes the simplest strategy is choosing one ingredient that can be transformed into several meals with just a few pantry staples.
It's one of my favorite ways to make eating meals at home feel realistic—even during busy weeks.
